Cooking Vacations - Apple Jam - Greek Jewish style
My mother's traditional Apple Jam for Jewish New Year
2 kg. Apples (smith green)
1 kg. Sugar
20 gr. vanilla sugar
11/2 cups of water
1/2 cup lemon juice
- Peel & grate the apples.
- Put the grated apples, sugar, vanilla sugar and water in a cooking pot.
- After about 10 min of cooking on medium flame, add the lemon juice.
- Check consistency of the jam, by pouring a bit of the mixture on a cold plate.
The jam should not be too fluid and not too strong. It is ready when it just stays still on the plate.
