Cooking Vacations - Black Lentil Salad
1 cup black lentils
4 cloves (inserted into the onion)
½ cup chopped mint leaves
2 chopped shallots
1/3 cup olive oil
1 spoonful balsamic vinegar or red wine vinegar
- Cook the lentils in a pot with water, salt and the onion. Bring to boil, reduce the fire to low and cook for 15 additional minutes until the lentils are soft but not too soft. Pour into a sieve and rinse in water.
In a bowl, mix the lentils, the shallots, the mint leaves, the oil and the vinegar and add a bit of salt.
