Friki (smoked wheat) soup
This soup, like many of the dishes of the Arab cuisine of the Galilee seems quite simple but is based on special fresh ingredients with the added touches of unique spices which create an unforgettable taste. This will be, of course, the lingering taste of our culinary tour of the Galilee.
3 cups of friki
3 liters of chicken stock
½ cup olive oil
½ teaspoon ground English pepper
1/3 teaspoon ground cinnamon
1. Soak the friki in lukewarm water for half an hour. Drain thoroughly.
2. Boil the chicken stock with the olive oil and salt.
3. Add the soaked friki and cook until it is soft. Condiment with English pepper and cinnamon. Serve hot.
