Cooking Vacations - Fish Kebabs
Ingredients (for 6 servings)
1 kg ground fish (tilapia, sea bass, mullet, red drum)
2 shallots, finely chopped
A bunch of parsley leaves, finely chopped
A bunch of mint leaves, finely chopped
A bunch of coriander leaves, finely chopped
Lemon zest
2 cloves garlic
6 Tbs. olive oil
Salt and pepper
Instructions
- Knead all the ingredients for the kebabs until you obtain a uniform mixture.
- Shape the kebabs and cook on a grill or on a lined skillet, 3-4 minutes on each side (the kebabs have to be cooked medium)

When the kebabs are ready, place them on couscous or in a pita and add a generous spoonful of the yellow tahina (see recipe)
